Back-of-house partitions can be exposed to higher humidity, grease and frequent cleaning, while dining-room walls prioritize appearance and integration with architectural finishes. Wall assemblies are therefore planned according to their location instead of extending one gypsum and finish specification throughout the entire restaurant.
Ranges, preparation equipment, sinks, refrigeration and other commercial kitchen components create fixed dimensions that drywall partitions must accommodate accurately. Wall locations are coordinated with equipment layouts, plumbing rough-ins, electrical connections and required service clearances before boarding. Where equipment is wall-mounted, suitable backing can also be incorporated into the framing instead of relying on the finished gypsum surface for structural support.
Restaurant walls can contain numerous water, drainage, gas, electrical and refrigeration service penetrations concentrated behind equipment. 1. Using Moisture-Resistant Gypsum In Humid Areas

Products may use treated gypsum cores, moisture-resistant paper or fibreglass mat facings, with common commercial thicknesses including 1/2 inch (12.7 mm) and 5/8 inch (15.9 mm). The panel is selected according to its listed application rather than treating moisture-resistant board as universally suitable throughout a commercial kitchen.
2. Specifying FRP For Washable Surfaces
Fibre-reinforced plastic panels provide a hard, non-porous and readily cleanable finish frequently used where restaurant walls require more frequent washing than painted gypsum surfaces. FRP sheets are installed over a compatible substrate using the manufacturer's adhesive and trim system, with joints and terminations detailed for the intended environment. Because FRP is a finish layer rather than drywall itself, the condition and suitability of the substrate behind it remain important to long-term performance.
3. Using Fibreglass-Faced Gypsum Where Appropriate
Fibreglass-mat gypsum eliminates conventional paper facing from the panel surfaces and can provide enhanced resistance to moisture and mould in suitable interior applications. Certain products are tested under ASTM D3273 and can achieve the highest score of 10 for resistance to mould growth under the specified laboratory conditions. This does not make the assembly waterproof, but it can provide a more appropriate substrate than ordinary paper-faced wallboard in selected moisture-prone restaurant locations.
4. Selecting Finishes For Dining Areas
Dining-room drywall generally experiences less moisture than kitchen walls but places greater emphasis on appearance, cleaning and resistance to everyday contact. Smooth gypsum surfaces can receive durable commercial primers and washable paint systems selected for the expected cleaning frequency and desired sheen. Material selection can therefore change at the kitchen-to-dining transition, avoiding the unnecessary use of utilitarian back-of-house wall systems where a refined customer-facing finish is more appropriate.

Drywall demolition, cutting and sanding should be separated from active food preparation because construction debris and fine gypsum dust are incompatible with exposed food and sanitized work surfaces. Disruptive work can be scheduled outside operating or preparation periods where practical, with the affected kitchen or dining zone removed from service. Sequencing individual areas also allows unaffected portions of the restaurant to remain usable when the project layout permits.
Temporary barriers and controlled work zones help prevent gypsum dust from migrating into food-storage, preparation and serving areas. Dust-producing activities can use appropriate extraction equipment, while nearby equipment, shelving and surfaces are protected before work begins. FRP manufacturers specify acceptable substrates, adhesives and installation conditions, and ordinary gypsum board should not automatically be assumed appropriate in every kitchen location. The substrate must also be sound, dry and sufficiently flat because FRP does not correct deteriorated or moisture-damaged drywall underneath it.
Not automatically. Moisture-resistant gypsum tolerates appropriate humidity and incidental moisture better than conventional wallboard, but it is not a waterproof surface. Areas subject to repeated splashing, washing or direct water exposure may require a more appropriate substrate and protective finish system. The expected exposure determines the assembly rather than simply choosing a panel labelled moisture resistant.
Bonding problems can result from an unsuitable substrate, incorrect adhesive, contaminated surfaces, excessive substrate moisture or inadequate adhesive transfer. Temperature and installation conditions can also affect some adhesive systems. Because FRP sheets cover large areas, substrate preparation and following the panel and adhesive manufacturers' requirements are important to preventing localized debonding after installation.
That depends on the equipment, wall assembly and required protective finish. Some locations can use finished gypsum behind movable equipment, while areas exposed to heat, grease, moisture or frequent cleaning may require FRP, stainless steel or another specified surface.
